What’s in the Box: Swiss chard, basil, cabbage(green), green garlic, golden beets, summer squash and zucchini (assorted types), green onion, and kale.
What’s going on at the farm: It was another dry week without rain here on the farm. Winter squash got started in the greenhouse. We got the ground cherries, fennel, and cantaloupe planted and weeded our green beans, peppers, and trellised tomatoes. Our tomato crop is looking great with this hot and dry weather they should be coming earlier than ever. I actually found several ripe cherry tomatoes this week and usually they are not ready until mid July for us. Slicing tomatoes are usually ready later than that, but, since we got the new greenhouse up, it looks like there will be an early slicing crop as well. The golden beets this week are really sweet and I recommend roasting them with the squash and maybe adding a little garlic or basil. I roast them in the oven on a low broil (around 400-425 degrees) with olive oil for 20-30 minutes. Make sure to stir them around once or twice in the process. Fresh basil goes in after the veggies are removed so it won’t burn to a crisp on high heat. Cucumbers may make the box this week but our outdoor crop is not coming yet and the few we have in the greenhouse may not be enough to distribute.
